Spinach,artichoke, and feta phyllo bites
I made this recipe many years ago for one of my cousin’s baby showers and it was a hit. It was the only dish that had no leftovers. So I decided to share the recipe with you all. Maybe some of you will even decide to make it as an appetizer for the holidays.
You will need:
1 package of thawed frozen spinach with the water squeezed out.
1 jar of marinated artichoke hearts.
A container of feta cheese crumbles.
1 (or more) packages of phyllo dough cups. They can be found in the freezer aisle at your grocery store.
After thawing and squeezing the water out of the spinach combine it with the artichoke hearts that you’ve cut into smaller pieces. Season to your liking with salt, pepper, and any other seasonings you like. Spoon the mixture into the phyllo cups that you’ve put on baking sheets and top each cup with a few feta cheese crumbles. Bake at 350 until the phyllo cups are turn golden brown. Remove from the oven and place them on a platter or whatever type of dish you intend to serve them on.
